Skinny Single Serving Chocolate Chip Muffin

yield: 1 MUFFIN

Ingredients:

3 Tablespoons white whole wheat flour (or all-purpose flour)
1/4 teaspoon baking powder
dash of salt
1 and 1/2 Tablespoons semi-sweet chocolate chips (or milk chocolate)
1/2 teaspoon vanilla extract
1 Tablespoon butter or coconut oil, melted (I used Land O' Lakes light butter)
1 Tablespoon + 1 teaspoon milk (almond milk, soy milk, or cow's milk will work)
1 Tablespoon sugar

Directions:

Preheat oven to 330 degrees.

Line muffin tray with 1 liner. Set aside.

Mix flour, baking powder, salt, and chocolate chips together in a small bowl. Add vanilla, melted butter, milk, and sugar.

Mix everything together until just combined. DO NOT over mix.

Pour batter into prepared muffin liner. Bake for 17 minutes or until a toothpick inserted in the center comes out clean. Enjoy!


 Clean Eating Brownie Cupcakes

Makes 24 Mini Cupcakes

Ingredients:

1 Can Black Beans 540mL (rinsed thoroughly)
2 Egg Whites and 1 Full Egg
1/3 Cup Plain Pureed Pumpkin
3 Tbsp Cashew Butter (or Vegan Butter/Vegetable Oil)
1/4 Cup Cocoa Powder
1/8 Tsp Salt
1 Tsp Vanilla Extract
6 Packets Stevia
4 Tbsp Agave or Honey
1/2 Cup Dark Chocolate Chips

Directions:

Preheat oven to 350F.

Spray your mini muffin tin with olive oil spray.

Place all ingredients excluding chocolate chips into your food processor and blend until smooth scraping down the sides occasionally.

Remove blade and with a spoon stir in chocolate chips.

Spoon batter evenly into muffin tin.

Bake for 20 minutes.

Let cupcakes set for 5 minutes before transferring to a cooling rack.

Tip - If you have extra batter left place in a ramekin and bake a personal size treat.



 Vegan Brownie Batter Smoothie

Prep time: 5 Minutes

Yield: 1 Serving

Ingredients:

1/2 Cup Pumpkin Puree
1/4 Cup Cocoa Powder
1 Scoop Vegan Chocolate Protein Powder (OR 2 Tbsp Hemp Seeds)
3 Packets Stevia (OR 4-5 Pitted Medjool Dates)
1.5 Tbsp Cashew Butter
1/4 Tsp Vanilla Extract
1.5 Cup Unsweetened Almond Milk (Or Unsweetened Rice, Hemp or Coconut Milk)

Directions:

Blend all ingredients together until smooth.
Serve and enjoy!

*Note:

1 Scoop Protein Powder = 34 grams

1 Packet Stevia = 1 gram

*Tip: You can freeze this recipe to make it into protein fudge!

*Tip: You could replace the vanilla extract with mint to create a mint chocolate fudge flavour!
